Rustic Carrot and Walnut Wedding Cake

Ingredients
- 2 cups All-purpose flour
- 1 1/2 cups Granulated sugar
- 1/2 cup brown sugar
- 2 teaspoons Baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 4 large Eggs
- 3 cups grated carrots
- 1 cup chopped walnuts
- 8 ounces cream cheese
- 1/2 cup unsalted butter
- 4 cups powdered sugar
- 1 teaspoon vanilla extract

Instructions

Step 1:
Preheat your oven to 350°F (175°C).

In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

In another bowl, mix the vegetable oil and eggs until well combined.

Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the grated carrots and chopped walnuts.
