Silken Chocolate Cherry Anniversary Cake

Ingredients
- 2 cups All-purpose flour
- 1 1/2 cups Granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons Baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 large Eggs
- 1 cup Milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 teaspoon cherry essence
- 1 cup heavy cream
- 1 cup chocolate chips
- 1 cup, pitted and halved cherries
Instructions

Step 1:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

In another bowl, whisk together the eggs, milk, oil, vanilla extract, and cherry essence.

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the boiling water until the batter is smooth.

Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

In a saucepan, heat the heavy cream until just boiling. Remove from heat and add the chocolate chips, stirring until smooth.

Once the cakes are cool, place one layer on a serving plate. Spread a layer of ganache on top, then add the halved cherries. Place the second layer on top and cover the entire cake with the remaining ganache.
