Spiced Pumpkin Harvest Cake

Ingredients
- 2 cups All-purpose flour
- 1 1/2 cups Granulated sugar
- 2 teaspoons Baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 4 large Eggs
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 8 ounces cream cheese
- 1/2 cup butter
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 cup candied pecans
Instructions

Step 1:
Preheat your oven to 350°F (175°C).

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.

In another bowl, beat the eggs, then add the pumpkin puree and vegetable oil, mixing until well combined.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Divide the batter evenly between two greased 9-inch round cake pans and bake for 25-30 minutes.

Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
