Torta di Ricotta e Pere
A delightful Italian cake featuring a rich ricotta cheese base layered with poached pears and a hint of vanilla. This moist and flavorful cake is perfect for any occasion, offering a balance of sweetness and creaminess that is sure to please.

Ingredients
- 500g ricotta cheese
- 3 medium Pears
- 150g sugar
- 3 large Eggs
- 1 tsp vanilla extract
- 200g All-purpose flour
- 1 tsp Baking powder
- 1/2 tsp salt
- 50g butter
Instructions

Step 1:
Peel and core the pears, then slice them into thin wedges.

In a saucepan, combine 100g of sugar with 500ml of water. Bring to a simmer and add the pear slices. Poach for about 10 minutes until tender.

In a large bowl, mix the ricotta cheese, remaining sugar, eggs, and vanilla extract until smooth. Gradually add the flour, baking powder, and salt, mixing until just combined.

Fold in the poached pear slices into the ricotta batter gently.

Preheat the oven to 180°C (350°F). Grease a round cake pan with butter and line the bottom with parchment paper.

Pour the batter into the prepared cake pan and smooth the top. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve dusted with powdered sugar if desired.
