Tropical Kiwi and Passionfruit Cake

Ingredients
- 2 cups All-purpose flour
- 1 1/2 cups Granulated sugar
- 2 teaspoons Baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3 large Eggs
- 1 cup Milk
- 1 cup fresh kiwi, pureed
- 1/2 cup passionfruit pulp
- 8 ounces cream cheese, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- as needed slices of kiwi for garnish
Instructions

Step 1:
Preheat your oven to 350°F (175°C).

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In another bowl, cream the softened butter and granulated sugar until light and fluffy.

Add the eggs one at a time, mixing well after each addition. Then, mix in the milk, kiwi puree, and passionfruit pulp.

Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Pour the batter into a greased cake pan and bake for 30-35 minutes, or until a toothpick comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

In a bowl, beat the cream cheese until smooth, then gradually add the powdered sugar and vanilla extract until well combined.
