Tropical Paradise Cupcakes

Ingredients
- 1 1/2 cups All-purpose flour
- 1 cup Granulated sugar
- 1 1/2 teaspoons Baking powder
- 1/2 teaspoon salt
- 1 cup unsweetened shredded coconut
- 2 large Eggs
- 1/2 cup coconut milk
- 1 teaspoon vanilla extract
- 1/2 cup butter, melted
- 2 cups powdered sugar
- 1/4 cup passion fruit puree
- for garnish toasted coconut flakes
- for garnish fresh kiwi, sliced
Instructions

Step 1:
Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.

In a large bowl, whisk together the flour, sugar, baking powder, salt, and shredded coconut.

In another bowl, beat the eggs and then add the coconut milk, vanilla extract, and melted butter. Mix well.

Pour the wet ingredients into the dry ingredients and mix until just combined.

Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
