Café au Lait Mousse Cake

Ingredients
- 1 cup espresso coffee
- 2 cups heavy cream
- 3/4 cup sugar
- 2 tablespoons gelatin
- 1/4 cup water
- 1 teaspoon vanilla extract
- 4 large Eggs
- 1 cup All-purpose flour
- 1 teaspoon Baking powder
- 1/4 teaspoon salt
- 8 ounces dark chocolate
- 1 cup whipped cream

Step 1:
Dissolve gelatin in water and let it bloom for 5 minutes. Heat the espresso and sugar in a saucepan until sugar dissolves. Remove from heat and stir in bloomed gelatin until fully dissolved.

In a separate bowl, whip 1 cup of heavy cream until soft peaks form. Gently fold the whipped cream into the espresso mixture until combined.
