Lavender Honey Mousse Cake

Ingredients
- 1 cup All-purpose flour
- 3/4 cup Granulated sugar
- 1/2 cup unsalted butter
- 3 large Eggs
- 1/4 cup honey
- 2 tablespoons dried lavender
- 1 cup heavy cream
- 1 tablespoon gelatin powder
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
Instructions

Step 1:
Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

In a bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the honey and vanilla extract.

Sift together the flour and dried lavender, then gradually add to the wet mixture, mixing until just combined.

Pour the batter into the prepared cake pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.

In a small bowl, sprinkle gelatin over water and let it bloom for 5 minutes. In a saucepan, heat 1/2 cup of heavy cream with dried lavender until just simmering. Remove from heat and stir in the bloomed gelatin until dissolved.

In a mixing bowl, whip the remaining heavy cream with powdered sugar until soft peaks form. Gently fold in the lavender-infused cream mixture.

Cut the cooled sponge cake in half horizontally. Place one layer on a serving plate, spread half of the mousse over it, then top with the second layer and the remaining mousse. Refrigerate for at least 2 hours to set.
