Soft Vanilla Bean and Peach Baby Shower Cake

Ingredients
- 2 1/2 cups All-purpose flour
- 2 cups Granulated sugar
- 1 cup unsalted butter
- 4 large Eggs
- 1 vanilla bean
- 1 tablespoon Baking powder
- 1/2 teaspoon salt
- 1 cup Milk
- 3 cups, sliced fresh peaches
- 8 ounces cream cheese
- 2 cups powdered sugar
- 1/2 cup heavy cream

Step 1:
Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Scrape the seeds from the vanilla bean and add to the mixture.

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.

Divide the batter evenly between two greased and floured 9-inch round cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

In a saucepan over medium heat, combine the sliced peaches with a little sugar and cook until they are soft and syrupy, about 10 minutes. Remove from heat and let cool.

In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and heavy cream, mixing until the frosting is light and fluffy.

Once the cake layers are completely cool, place one layer on a serving plate. Spread a layer of peach filling on top, then place the second layer on top. Frost the top and sides of the cake with the cream cheese frosting.
